Pollo Pibil Enchiladas

Slow roasted chicken in achiote and citrus. Wrapped in soft corn tortillas with sweet peppers and onions, baked with a tomato-achiote  sauce. Finished with pickled red onions, crema, cotija & fresh cilantro.

With tomatoes, onions, peppers and Mexican oregano.  


Red Thai Curry Vegetables

Zucchini, butternut squash, potatoes, green peas, broccoli & cauliflower simmered in a mild red curry coconut sauce with ginger, galagal, garlic, and lime.
