A very flavorful paste made from sweet and spicy peppers, first fermented then slow cooked with garlic, cumin, coriander and caraway.

Harissa is the basic flavoring agent in Tunisian cuisine and is extremely versatile. Use it as a condiment for grilled meat or fish, add it to roasted vegetables, or stir into stews and soups. Mix with mayo and use as a sandwich spread or as a dip for fries.
